Vanilla Ice Cream Recipe
6 eggs yolks
1 cup Sugar
4 cups milk ******
1 cup cream
1 vanila bean or 2 teaspoons vanilla extract
(this makes one quart)
1. Put the egg yolks and sugar in a heavy saucepan and whisk until pale yellow.
Combine the milk and cream in another saucepan. Bring it just to the boil.
Add 1/2 cup milk mixture beating rapidly to the egg yolks. Add the remaining milk mixture and continue to beat. Heat slowly a - stirring and scraping the bottom constantly Bring the
mixture almost but not quite to a boil (180°F). It should be like a custard.
Pour the custard into a cold mixing bowl and let stand to room temprature - add the vanilla extract here.
Freeze according to the directions on the freezer.
******I substitued 2 cups of pureed peaches and nectarines here and i'm sure you could do the same with berries.
