Marcy's Pineapple Upside Down Cake Recipe
1 yellow, pineapple or butter cake mix (plus ingredients called for on package)
1 stick margarine or butter
1 large can pineapple (rings, chunks or crushed) (I use chunks)
brown sugar
pecan halves
maraschino cherries
Preheat oven according to cake mix directions. Drain pineapple and reserve liquid. Substituting liquid from pineapple for water in cake mix, prepare cake mix according to directions. (You may have to add a bit of water to the juice to get the appropriate measurement.) Set cake batter aside.
In a large cast iron skillet, melt stick of margarine or butter on medium-high heat. Sprinkle enough brown sugar into margarine to cover bottom of skillet. Let cook and bubble for a minute or so, being careful not to burn. Adjust heat as necessary.
Remove skillet from heat. (Don't forget this step.)
Layer pineapple over entire bottom of skillet. Scatter cherries within the pineapple. Sprinkle pecan halves over pineapple and cherries. Pour cake batter over top of pineapple, cherries and pecans. Bake according to cake mix directions, usually 30-35 minutes.
When the cake is finished baking, remove from oven and immediately turn out onto cake plate or platter.
