Mandarin Orange Cake Recipe
1 box yellow cake mix
1 11-oz can mandarin oranges with juice (do not drain)
4 eggs
1 1/2 cups oil
Mix all ingredients including liquid in mandarin orange can, until oranges are well crushed and all ingredients are well mixed. Pour into 3 round cake pans (I use one sheet pan) and bake at 350°F for 20 minutes (for sheet pan it is about 45 minutes).
Cool completely and frost with following recipe.
12 oz. cool whip
1 small package instant vanilla pudding
8 oz crushed pineapple (do not drain)
Mix well and frost cake.
This cake is best if made the day before it is going to be served. Keep refrigerated.
