Christmas Fruit Blondies Recipe
Recipe says: "We suggest candied fruit, almonds, & raisins for these Christmassy squares, but feel free to substitute other nuts, slivered dried apricots or chocolate chips.

Preheat oven to 350°F

Blondies:

1/2 cup butter, softened
3/4 cup packed brown sugar
1 egg
1 tsp. vanilla
1 cup all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. ginger
1 cup chopped candied fruit
1/2 cup toasted chopped almonds
1/4 cup golden raisins

Orange Icing:

1 cup icing sugar
2 Tbs. butter, softened
4 Tsp. orange juice concentrate

To Make Blondies: In large bowl, cream butter and sugar until fluffy. Beat in egg & vanilla. In separate bowl, combine flour, baking powder, salt & ginger. Stir into batter; mix in fruit, almonds & raisins. Spread into greased 8" square cake pan. Bake 25-30 minutes, or until tester inserted into center comes out clean. Let cool on rack.

To Make Orange Icing: In mixing bowl, blend sugar and butter. Stir in orange juice until smooth. Spread over blondies. Store in air tight container at room temperature for 2 days before cutting (can be frozen for up to 4 months).
