Chocolate Easter Eggs Recipe
3/4 cup peanut butter
1/4 cup butter, softened
1 cup flaked coconut
1/2 cup finely chopped walnuts
1 1/2 to 2 cups powdered sugar, divided
2 cups (12 oz.) chocolate chips
2 T shortening

In a mixing bowl, cream peanut butter and butter until blended. Add coconut, nuts, and 1 cup pwd. sugar. Sprinkle some pwd. sugar on kneading surface, and turn dough out. Knead in enough sugar to make dough hold shape when formed into an egg. Shape into small egg shaped pieces (I got about 30). Cover and chill for an hour. In a double boiler over hot water, melt chocolate chips and shortening, stirring until smooth. Dip eggs in chocolate, and place on wax paper to harden. Chill. Yummy!
