Chocolate Cherry Cheesecake Pie Recipe
12 servings

Crust

11 graham crackers
1/4 cup sugar
5 Tbls. unsalted butter, melted
non stick cooking spray

Filling

6 oz bittersweet chocolate
2 (8 oz) cream cheese + 1 (3 oz) cream cheese
2 large eggs
1 cup sugar
2 tsp. vanilla extract
1 1/2 cups cherries (I used fresh sour cherries from my tree)

Crust: Process the graham crackers to a fine crumb. Add the sugar and melted butter, mixing well (used food processor). Spray a 9" pie plate with cooking spray. Press the crumb crust into the pan and set aside. Preheat oven to 350°F. Place pie plate on cookie sheet and set aside-do not bake at this point.

Filling: Melt 4 oz of the chocolate and set aside ot cool slightly. In a food processor conbine cream cheese, eggs, sugar, vanilla and chocolate. Mix until very smooth. Mix with cherries. Spoon filling into the unbaked crust and place pie in oven on baking sheet. Bake 40-45 minutes. The pie will be firm to the touch, but still soft in the center. Cool on rack. Melt remaining 2 oz of chocolate and drizzle over pie. Cover loosely and refrigerate 4 hours before serving.
