Butter Frosting Recipe
6 T butter
1 lb powdered sugar (4 3/4 cups)
light cream (1/4 cup)
1 1/2 t vanilla
Cream butter: gradually add about 1/2 the sugar, blending well. Beat in 2 T cream and vanilla. Gradually blend in remaining sugar. Add enuf cream to make of spreading consistency. Frosts 2 8- or 9" cakes.
Note: For a more creamy frosting, beat in 1 egg instead of the first 2 T of cream. After blending in the remaining sugar, beat in just enuf cream to make frosting the desired consistency. (I don't use cream, but milk and it's just fine).
