Bunuelos (Sopapillas) Recipe

2 eggs
2 Tbsp melted butter
1/4 cup milk
2 cups flour
1 Tbsp sugar
1 tsp salt
oil or lard for frying
brown sugar syrup or honey

In a large bowl, beat eggs, then beat in butter and milk. Combine flour, sugar and salt and add to egg mixture. Mix well. Turn dough out on a lightly floured board and knead until silky smooth but not sticky. Divide dough into about 12 to 14 pieces and shape into little balls. Cover and let rest for about 20 minutes. Roll each out into a circle, very thin. Let rest another 5 minutes, then fry one at a time in hot oil until pale gold. Drain on paper. Serve with honey.

Brown Sugar Syrup

Make a thin syrup by adding a little hot water to a cone of Mexican brown sugar (piloncillo) or to 1/4 cup brown sugar with a dash of cloves. Stir with cinnamon sticks, allowing syrup to cool a bit with cinnamon.
