Brian's Apple Brownies Recipe
Womans Day (September 20/94, Page 125)
Brian Ciavarella, a soccer playing sixth-grader from Alden Terrace School in Elmont, New York, developed this apple brownie dessert from a recipe traditionally made by his mother, Virginia.
3 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1 1/4 cups vegetable oil (I substitute with 1 1/4 cup apple sauce - low fat, very moist)
3 large eggs
2 cups granulated sugar
2 tsp. vanilla extract
3 cups Granny Smith apples (about 1 pound), peeled and chopped
1 cup chopped walnuts (I substitute pecans, if I use nuts)
3/4 cup raisins (optional) (I substitute chocolate chips!)
1. Heat oven to 350°F. Grease a 15 1/2x10 1/2x1" jelly roll pan.
2. Mix flour, baking soda, salt and cinnamon in a large bowl.
3. Whisk oil and eggs in another large bowl until blended and smooth. Stir in sugar and vanilla.
4. Stir in flour mixture until blended. Stir in apples, nuts and raisins, if using (mixture will be very stiff). Spread evenly in prepared pan.
5. Bake 40-45 minutes until top is golden and a pick inserted in centre comes out clean.
6. Let cool completely on wire rack. Cut in 40 squares.
