Chicken Sausage Gumbo Recipe
1 medium Frying Chicken - cut into pieces
1 lb(s) smoked sausage - sliced into 1/4" pieces
3/4 cup(s) vegetable oil
3/4 cup(s) flour
1 medium yellow onion - diced
2 stalks celery - sliced
1 large green pepper - diced
7 cup(s) chicken stock
6 cup(s) Cooked long grain white rice
1. Fry chicken in oil in a heavy skillet.
2. Remove chicken, cut meat from bone and dice into 1/2" chunks.
3. Bring oil back to a full 3/4 cup, preserving any bits of chicken left in the pan.
4. Bring oil with bits to high heat and stir in flour.
5. Stir continously with a whisk until mixture becomes medium brown.
6. Remove from heat and stir in onion, celery and green pepper.
7. Continue to stir until mixture stops cooking.
8. Put stock in a heavy pot and bring to a boil.
9. Stir vegetable mixture into stock, spoonful at a time.
10. When all has been added, stir in sausage.
11. Reduce to simmer and let cook for 45 minutes.
12. Add chicken and stir until chicken heats through, about 5 minutes.
13. To serve, spoon rice into serving bowls and add gumbo.
