Oatmeal Black Walnut Pancakes Recipe
1 1/2 c. uncooked rolled oats
1 c. all-purpose flour
2 Tbs. brown sugar
1/4 tsp. salt
3 Tbs. baking powder
1/2 c. chopped black walnuts
1 1/2 c. milk
2 eggs
2 Tbs. butter, melted
Combine dry ingredients; set aside. Whisk together milk, eggs and butter. Pur over dry ingredients and mix until just combined. Spoon by 1/4 c. onto greased griddle. Serve with Orange Sauce.
Orange Sauce:
3/4 c. brown sugar
4 Tbs. butter
1/2 c. orange juice
1 Tbs. grated orange rind
Combine ingredients in saucepan. Simmer 5 minutes, stirring constantly. Cool slightly and serve over pancakes.
