Cowboy Coffee Cake Recipe
2-1/2 cups flour
1/2 teaspoon salt
2 cups brown sugar
2/3 cup shortening
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup sour milk*
2 well beaten eggs

Grease and flour two 8" round pans. Line bottoms with wax paper. Preheat oven to 375°F.

Combine flour, salt, sugar and shortening together with pastry blender. When blended, take out 1/2 cup of crumbs and reserve. To remaining crumbs, add baking powder, cinnamon, and nutmeg and mix well. Then add milk and eggs. Stir together. Pour into prepared pans. Sprinkle reserved crumbs on top. Bake 20-30 minutes or until toothpick inserted in center comes out clean.

Note: *To make sour milk add 1 tablespoon lemon juice to 1 cup of milk.
