Chocolate Banana Coffee Cake Recipe
Robin Hood Flour & Bakers' Choc. Baking Festival flyer (1992)

Quick, moist and yummy. The perfect weekender or lunchbox treat.

1 cup butter
2 cups granulated sugar
2 eggs, beaten
1 tsp vanilla
2 1/2 cups mashed ripe bananas (about 5)
3 cups all purpose flour
2 tsp baking powder
2 tsp baking soda
1 cup sour cream
1/2 cup firmly packed brown sugar
1 tsp cinnamon
1 (300g) pkg semi-sweet choc. chips

Heat oven to 350°F. Cream together butter and sugar on medium speed of electric mixer. Add eggs and beat until smooth. Add vanilla and mashed bananas; mix until smooth. Sift together flour, baking powder and baking soda. Add to banana mixture alternately with sour cream, ending with dry ingredients. Pour half of the batter into a greased 13x9" cake pan. Combine brown sugar and cinnamon. Sprinkle half of the mixture over the batter in pan. Top with half of the chocolate chips. Repeat layers. Bake at 350°F for 45-50 minutes.
