Pumpkin Bread Recipe
WET

3 c. Sugar
1 c. Vegetable Oil
4 Eggs

2/3 c. water
1 c. Pumpkin

DRY

3 c. Flour
1/2 tsp. Salt
2 tsp. Baking soda
1 tsp. Cinnamon
1 tsp. Nutmeg

1. Pre-Heat Oven at 350°F.
2. Mix sugar, oil, & eggs.
3. Mix all dry ingredients and sift or whisk.
4. Add Dry to wet ingredients.
5. Add water and pumpkin.
6. Grease 2 coffee cans. Fill 3/4 full.
7. Bake 350°F for 1 hour.

This is my mother's version of this old favorite. It is as moist and chewy as brownies, but the consistency is like a cake. We love to serve it warm with soft butter melted on top. Nothing like it. It is great in the autumn, or anytime.
