Pecan Pumpkin Bread Recipe
2 1/2 cups flour
1 cup whole wheat flour
3 cups sugar
2 tsp baking soda
1 1/2 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
1/2 cup vegetable oil
1/2 cup applesauce or apple butter
2/3 cup water
4 eggs
2 cups canned pumpkin
1/2-1 cup chopped pecans

Heat oven to 350°F. Spray two 9x5" loaf pans with non-stick cooking spray. In a large bowl combine flours, sugar, soda, salt, cinnamon and nutmeg. In medium bowl, combine oil, applesauce, water, eggs and pumpkin; blend well. Add wet ingredients to flour mixture; beat 1 minute at medium speed. Fold in pecans. Pour batter into greased pans. Bake at 350"F for 60 to 70 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pan on a rack. Remove from pan and allow bread to cool completely on rack.
