Egg Buns Recipe
1 pkg dry yeast
1/4 cup warm water
1 3/4 cups all-purpose flour
1/2 tsp salt
5 tsps sugar
3 tbsps milk
2 eggs, lightly beaten
2 tbsps butter, melted and cooled
1 egg yolk, beaten, for brushing

Dissolve the yeast in the warm water. place the flour in a bowl, mix in the salt and sugar, then add the milk, softened yeast, the 2 eggs and the cooled butter. turn out onto a floured work surface and knead, adding more flour as necessary. this is a very sticky dough, and the best way i've found to deal with it is to slam it to the counter several times until it's smooth and elastic, then knead. the dough will be soft, but shouldn't be sticky. divide the dough into 1.5" balls and set on a cookie sheet. if you want to add a filling, flatten each ball, put a small amount of filling (try sausage, cheese, garlic & mushrooms, spinach, tomato sauce & peperoni, whatever you want - if you use meat, it should be fully cooked) into the center, then wrap the edges of the dough around it and re-roll it into a ball. flatten slightly on the cookie sheet (just so it has a base). let the dough rise in a warm spot for about 30 minutes, or until double in size. brush the rolls with the egg yolk mixed with a tsp of water and bake at 350°F until very well-browned, about 15 minutes.
