Banana Spice Streusel Muffins Recipe
1 1/2 cups all purpose flour
1/2 cup wheat germ
1/2 cup firmly packed brown sugar
2 1/2 tsp baking powder
1 1/4 tsp pumpkin pie spice
1/2 tsp salt
3/4 cup mashed ripe bananas (2 medium)
3/4 cup skim milk
3 TBSP margarine, melted
2 egg whites, slightly beaten

Topping:

3 TBSP wheat germ
2 TBSP packed brown sugar
1 TBSP flour
1 TBSP margarine, melted
1/8 tsp cinnamon

Heat oven to 400°F. Line 12 muffin cuos with papers or grease bottoms. In large bowl, combine first six ingredients. In medium bowl combine next four ingredients. Add to dry ingredients and mix just until moistened. Fill muffin cups equally. In small bowl, combine topping ingredients until well blended. Sprinkle evenly over tops of muffins, patting gently. Bake 20 to 22 minutes or until done.
