Whole Wheat Zucchini Herb Bread Recipe
3/4 C warm water
1 T honey (I used maple syrup, with a big swig of blackstrap molassas/good for iron)
1 1/2 T vegetable oil (I use canola)
1 cup Zucchini, shredded (I used a little more)
1 cup whole wheat flour (I used 2)
2 1/2 cups bread flour (I used 1 1/2 cups of enriched unbleached organic flour)
1/2 tsp. Dried basil or rosmarry or 1 tsp fresh (I used at least one tsp dried)
1 T sesame seeds
1 tsp. Salt
2 tsp dry yeast
Add in order to bread machine. Set on basic medium setting. Its very light and yummy, NOT SWEET, like typical zucchini bread.
