Sparkling Ginger Plum Lemonade Recipe
SERVES 6

You can use any variety or combination of plums in this cooler

9 medium ripe plums (about 2 1/2 pounds), pitted, plus wedges for garnish
5 tablespoons freshly squeezed lemon juice (3 lemons)
1 cup Ginger Syrup (recipe follows)
1 cup seltzer, chilled

1. Place the plums in a juice extractor, and process to extract all juice.

2. Transfer the plum juice to a large pitcher, and stir in the lemon juice, ginger syrup, and seltzer. Fill pitcher with ice. Garnish with plum wedges, and serve.

Ginger Syrup

MAKES 4 Cups

The strength of the syrup will depend on the amount of time it steeps.

1 3/4 cups sugar
1 six-inch piece ginger, peeled and thinly sliced lengthwise

In a medium saucepan, combine the sugar, ginger, and 3 1/2 cups water; bring to a boil over medium-high heat. Cook until the sugar has completely dissolved, about 1 minute. Reduce heat to a simmer, and cook 5 minutes more. Remove saucepan from heat let syrup stand about 30 minutes. Remove and discard the ginger. Store syrup in tight container, refrigerated, up to 2 months.
