Greek Coffee Recipe
2 cups cold water
2 tablespoons sugar
3 cardamom seeds, crushed
3 tablespoons finely ground espresso beans

In a small heavy saucepan, bring water, sugar and cardamom to a boil over low heat. Stir in espresso and return to boil over low heat. When coffee foams up to rim, remove pan from heat and let cool to allow grounds to settle. Repeat boiling and settling one more time. Then bring to a boil over low heat a third time. Remove pan from heat. When foam has settled, carefully spoon into small espresso cups. Serves 4-6. (Note: We use a strainer. Also they say 4-6 servings--we say more like two servings.)
