Manicotti Recipe
4 cups mozarella cheese
1 cup parmasian cheese
1 box manicotti noodles
2 jars pasta sauce
1 15 ounce container ricotta cheese
2 eggs
1 lb hamburger
Cook manicotti noodles according to instructions. Brown hamburger and drain. Add spaghetti sauce. (I also add oregano or italian seasonings). In separate bowl, mix 3 cups mozarella, 2 eggs, 3/4 parmasian cheese, and ricotta.
Pour 1/2 of sauce mixture in bottom of pyrex dish. Stuff manicotti with cheese mixture. Cover manicotti with remaining sauce and cheeses. Bake at 350°F for around 45 minutes or until cheese is bubbly.
*hint** I do NOT cook the manicotti first. It's very hard to get them stuffed when they're cooked. As long as you have sauce on the bottom and covering them, they soften in the oven. You can also add frozen spinach to the filling, but my kids won't eat the "green stuff" anymore, so I leave it out.
