Bean Burrito Bake Recipe
from Betty Crocker Bisquick Makes It Easy! November 1994

1 pound lean or regular ground beef
1 can (16 oz) refried beans
1 cup Bisquick Original baking mix
1/4 cup water
1 avocado, sliced, if desired (I like this, but my kids don't)
1 cup thick salsa
1 1/2 cups Cheddar cheese (6 oz) (we just shred a bunch up without measuring it)
Sour cream, if desired

Heat oven to 400°F. Grease pie plate, 10x1 1/2". Cook ground beef in 10" skillet, stirring frequently, until brown; drain. (This is one recipe where I don't go exactly by the recipe. I use taco seasoning in my meat. I really like it better.)

Mix beans, baking mix and water. Spread mixture on bottom and halfway up side of pie plate. Layer beef, avocado, and salsa.

Bake 20 minutes or until knife inserted in center comes out clean. Sprinkle with cheese. Bake 2 to 3 minutes longer or until cheese is melted. Serve with sour cream. (Since the kids don't like avocado I usually put guacamole on mine.)

8 servings.
