Baked Pancake Recipe
It is important that the oven be hot enough for the pancake to develop high, crisp edges with a popover-like middle. Serve with sauteed apples and raisins, or any syrup or fruit.

2 large eggs
1/2 cup milk
1/2 cup flour
1/4 tsp. salt
a pinch of nutmeg
1 Tbsp. oil

Heat oven to 450°F. Have ready a 9 or 10-inch ovenproof skillet or a 9-inch glass or metal pie pan, or an 11x7-inch baking dish.

In food processor, blender, or by hand, mix eggs, milk, flour, salt and nutmeg until smooth. Beat in flour, salt and nutmeg. Don't worry if tiny lumps of flour remain.

Heat oil in skillet, pie pan or baking dish in oven 5 minutes. When very hot, pour in batter. Bake uncovered 18 to 20 minutes without opening oven door, until pancake is puffed and crisp around edges and golden brown in middle.
