Green Onion Cakes Recipe
2 CUPS All purpose Flour
1/2 TSP Salt
3/4 CUP HOT Water
3/4 CUP thinly sliced, Green Onion
2 TBSP cooking Oil

Measure flour and salt into a food processor. With lid in place on the processor slowly pour the HOT water through the food chute until dough starts to form a ball. Remove and knead on a lightly floured surface until smooth. Cover with plastic wrap and allow to stand for at least 30 minutes. Then shape the dough into a long roll and cut into 12 peices.

Put onion into a shallow bowl. Flatten one peice of dough lightly between your palms. Press each side into the onion. Knead onion into the dough. Shape once more into a flattened circle and roll out with a greased rolling pin onto a lightly greased surface into a 4 1/2" circle. Repeat with the rest of the dough making sure to keep the access covered with plastic wrap until you are done.

Heat 1 1/2 TSP of cooking oil in a non-stick fry pan. Arrange 4 onion cakes in the pan. Cook over medium high heat, flattening down with the spatula until brown patches appear on the cakes on both sides. DO NOT OVERCOOK. The cakes should be soft, pliable & chewy. Darin on paper towels. Cut into 2 or 4 peices each.
